Chihili
An early and sure-heading Chinese cabbage, growing 18 to 20 inches tall and about 3 ½ to 4 inches thick. The firm, well-blanched heads taper near the top.
Pe-Tsai
One of the oldest varieties, with large, light green outer leaves. The thick, pure white heart is tender, juicy, and has an agreeably pungent flavor. Makes larger heads than Wong Bok described above.
Wong Bok
A particularly desirable variety with short, broad, tightly folded, well-blanched heads. Juicy, and of agreeably pungent flavor. The heads are 8 to 10 inches high and very broad.
