Boston Greek
A very desirable summer Bush Squash introduced by our friends from Southern Europe. The fruits are oblong and average about 12 inches in length; color dark green, often striped or mottled with lighter green or yellow. They may be prepared for the table in the same way as any summer squash, but are most delicious and palatable when sliced and fried like Egg Plant. Picked when about 8 inches in length and cooked as described above, the Greeks and Italians esteem it a great delicacy. The best size for the Boston market is a squash 7 or 8 in. long.
